  • 1 cup unsalted butter
  • 1 cup packed dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 10 oz dark chocolate, chopped

Brown the butter in a saucepan over medium heat until nutty and amber. Cool 10 minutes.

  2. 2

Whisk in both sugars, then the eggs and vanilla until glossy.

  3. 3

Fold in flour, baking soda, and salt just until combined. Stir in the chocolate.

  4. 4

Chill the dough at least 1 hour. Heat the oven to 350°F.

  5. 5

Scoop onto a lined sheet, sprinkle with flaky salt, and bake 11–13 minutes until edges are set.

Notes

The dough keeps 3 days in the fridge, or freeze scooped balls for later.
